Job Title: Indian Chef

Location: Malta

Department: Culinary / Food & Beverage

Reports To: Head Chef / F&B Manager

Job Overview

We are looking for a skilled and passionate Indian Chef to join our culinary team. The ideal candidate will have extensive experience in preparing authentic Indian dishes across multiple regional cuisines and bring creativity, innovation, and high standards of quality to our kitchen. This role requires strong knowledge of traditional cooking methods, including the use of the tandoor, along with the ability to cater to diverse dietary requirements.

Key Responsibilities

  • Prepare and cook authentic Indian dishes covering multiple regions (North, South, East, West).
  • Design and develop menus that highlight traditional Indian flavours with creativity.
  • Ensure food quality, consistency, and hygiene standards are maintained at all times.
  • Manage inventory, food costs, and kitchen supplies efficiently.
  • Collaborate with kitchen and service staff to ensure smooth operations.
  • Support event and banquet catering by designing special Indian menus.
  • Maintain a clean and safe kitchen environment following HACCP and food safety standards.
  • Stay updated on Indian culinary trends and introduce innovative dishes.

Skills and Qualifications

  • 3–5 years’ experience as an Indian Chef in a fine-dining restaurant or 4/5-star hotel.
  • Proficiency in traditional Indian cooking techniques, including use of the tandoor.
  • Strong expertise in preparing a wide variety of Indian dishes across multiple regions.
  • In-depth knowledge of Indian spices, herbs, and ingredients.
  • Creativity in menu development, food presentation, and flavour pairing.
  • Excellent organisational and time management skills.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Multilingual skills, especially English and Hindi, are an advantage.
  • Experience catering to diverse dietary preferences (vegetarian, vegan, gluten-free, etc.).
  • Flexibility to work shifts, including evenings, weekends, and holidays.
  • Physical stamina to work in high-heat kitchens and stand for extended periods.
