As we continue to grow, we are proud to announce the opening of our brand-new hotel in the heart of St Julian's, VITA Hotel & Rooftop further expanding our presence in Malta’s vibrant hospitality scene.We are currently seeking a skilled and passionate Sushi Chef to join our team in Mellieħa and contribute to delivering exceptional culinary experiences for our guests.Profile OverviewReporting to the Sous Chef / Head Chef, the Sushi Chef is responsible for preparing high-quality sushi and Japanese dishes while maintaining excellent standards of food safety, presentation, and service. This role requires expertise in traditional and contemporary sushi techniques, strong knife skills, and a commitment to delivering an exceptional dining experience.Duties and Responsibilities

• Prepare sushi, sashimi, maki, nigiri, and other Japanese dishes according to restaurant standards.
• Ensure freshness and proper handling of all seafood and sushi ingredients.
• Maintain a clean and organized sushi counter and prep area at all times.
• Monitor inventory of fish, rice, and other ingredients; report shortages or spoilage to the Head Chef.
• Follow established recipes and presentation guidelines for consistency and quality.
• Ensure compliance with food safety, hygiene, and sanitation standards (HACCP).
• Interact politely and knowledgeably with guests (where applicable, e.g., live sushi bar settings).
• Collaborate with kitchen staff to ensure smooth service flow and timely dish preparation.
• Train and mentor junior kitchen staff or sushi assistants when required.
• Participate in menu development, seasonal specials, and creative sushi concepts
• Any other tasks commensurate with the role
